What is White Peony?
White Peony (Bai Mudan in Chinese) is the name of a tea picking style; each stem picked includes one bud and two young tea leaves. The name comes from the shape of the leaves as they brew, like flowers dancing in the water.
White tea is full of healthy components, including catechins, polyphenols, and other antioxidants. Its properties are similar to certain types of Chinese Medicine. The tea gains in health benefits and complexity of flavor over time, and many people in China are now aging White Peony just like Sheng (Raw) Pu Erh. With age, White Peony becomes smoother and sweeter.
Traditional Processing Method
An experienced tea master is in charge of every processing step, from picking and outdoor sun withering through a long indoor withering lasting 2-3 days, and finally drying at low temperature. White tea is not rolled, and there is no “kill green” step to stop the fermentation process, so white tea is good for aging.
